Trout Farming and Sustainability
Our trout are raised in ponds fed by two natural chalk streams, ensuring a clean and stress-free environment. We follow sustainable practices, including using high-quality feed and minimal handling to ensure the health and welfare of our trout.
Sustainability is at the core of our operations. We use feeds that replace fish oil and fishmeal protein with vegetable protein and algae, and we have participated in trials to replace the remaining fishmeal with insect protein. Being an inland farm, the Environment Agency monitors the quality of the water coming into and leaving the farm with random monthly visits, ensuring we meet the strict limits to ensure our water management practices result in minimal environmental impact.
Animal welfare is a priority for us. We ensure our trout have plenty of space, clean water, and a diet that meets their nutritional needs. We also minimise handling to reduce stress.
Our Products
Our smoked trout products are prepared on the farm using traditional smoking methods. We use locally sourced hardwoods for smoking, which imparts a unique flavour to our trout. The taste of our fresh trout benefits from the farm being upstream and very close to the natural springs, which results in exceptionally clean water and better tasting trout. Our smoked trout gets a shorter than usual salting time, using dry salt rather than brine, and we give it a lighter than usual smoke, allowing for the very subtle taste to come through.
Fresh trout should be stored in the refrigerator, consumed within a few days, or frozen for up to three months. Our smoked products have a shelf life of 10 days and can be frozen for up to three months.
Our trout products can be frozen for up to three months without compromising quality.
Hot smoked trout is cured and smoked at a higher temperature but for a shorter period, resulting in a flaky texture. Cold smoked trout is smoked overnight at lower temperatures, giving it a silkier texture.
Our focus is on natural, high-quality ingredients. Our smoked trout products are made without unnecessary additives or preservatives.
All our products are gluten free, and our kitchen is nut free.
Ordering and Delivery
Yes, we offer overnight delivery for online orders nationwide and a monthly home delivery round to certain postcodes. When you place an order online, if you are within our home delivery area, you will automatically be offered it as a delivery option. Delivery charges apply, but orders over a certain amount qualify for free delivery.
We charge £5.95 for UK mainland delivery. There is no charge for orders over £70.

Absolutely! Our smoked trout products make excellent gifts. You can specify a different delivery address, set the delivery date and include a personal message with your order.
Due to the perishable nature of our products, we cannot accept returns. However, if you are unsatisfied with your purchase, please contact us to discuss how we can make it right.

Our fresh trout is harvested on the day of dispatch, ensuring it reaches you in the freshest possible condition. We also use insulated packaging and ice for delivery to maintain the ideal temperature.
As we smoke everything ourselves on the farm, we retain complete control over the smoking process. This enables us to optimise everything for the best possible taste, from the freshness of the trout to the selection of wood chips to the smoking temperature and duration.
